Sodium benzoate

It is a compound used as a food Preservative, it acts by inhibiting or retarding the fermentation process of food, as well as by controlling acidification or other processes that cause deterioration. Commonly used in: carbonated drinks, fruit salads, juices, jams, jellies, caviar, margarines, candies, fruit cakes, sauces, etc. This Preservative is effective only in a slightly acid environment.
